Heute teile ich mit euch eines meiner Lieblingsrezepte, den Flan auch genannt Crème caramel.
Eine Art Crème brûlée mit flüssiger Karamellsoße. Zwar beschränke ich mich in 'Cooking with Lien'
auf Asiatische Gerichte, dennoch ist der Flan eine weltbekannte Nachspeise, die man auf jeden
Fall ausprobieren sollte!
Hier die Zutaten für jeweils 3 Portionen:
Karamellsoße :
- Zucker (doppelt so viel Zucker wie Wasser)
- Wasser
- 1 TL Zitronensaft
Teig :
- 3 Eier
- 300ml Milch (für jedes Ei je 100ml Milch)
- 5 TL Zucker
- 1 Päckchen Vanilinzucker oder Extrakt
Für einen besonderen Aroma kann z.B. Rum o. geriebene Zitronenschale hinzugefügt werden.

Today I want to show you how to make crème caramel!
Actually this blog is used to be about asian food, but this dish is
also well known in our country.
Here are the ingredients you need : (for 3 servings)
For the layer of caramel:
- sugar (you have to use twice as much sugar as water)
- water
- a dash of lemon juice
For the batter :
- 3 eggs (for each egg you need 100ml of milk)
- 300ml milk
- 5 tablespoons of sugar
- a packet of vanilla sugar or extract
You can add different flavors of your choice f.e. rum, lemon peel, etc.
If you want your crème caramel to have a more creamy texture replace the 300ml of
milk by 200ml of milk and 100ml of whipped cream!
1. First of all you combine the sugar and water in a saucepan. Follow the steps
of the caramelizing process and add a dash of lemon juice before the
sugar-water boils to prevent the sugar from recrystallizing.
When the mixture reaches a brown golden color, fill it into small cups,
but only a thin layer, to let it cool down.
2. Now you place the milk with the 5 tablespoons of sugar over a medium-high heat
and wait till it boils. Then you turn off the cooker.
3. Preheat the oven to 140 Degrees.
4. For the fourth step, you should scrumble the three eggs. After that you add a bit of
the hot/warm milk and stir the liquids till the milk is dissolved. Repeat this step
until you're out of milk :D.
5. Next you fill this mixture into the cups with caramel and put them in the oven
for 45 min at 120 Degrees.
